It is often called a Mexican husk tomato or a Mexican groundcherry. These plants are very important in Mexican and Central American cooking. People love them for their tart and bright flavor. You might find them in a fresh salsa verde.

They can also be used in stews, soups, or even sweet jams. Some people even dry them to make a sweet snack.

Growing a tomatillo involves a very interesting way it works.

The fruit grows inside a thin, paper-like husk. This husk actually comes from the calyx, which is part of the flower. As the fruit gets bigger, it fills up this husk. Eventually, the fruit might even burst the husk open.

The fruit inside can be green, yellow, or even purple. Some varieties even have a sticky coating on them.

Scientists have studied these plants for a long time.

Carl Linnaeus named the genus Physalis in 1753. The name comes from a Greek word meaning to puff up. Later, Jean-Baptiste de Lamarck described the species Physalis philadelphica in 1786. These plants were grown by the Maya and Aztecs long ago.

They were even more important to those cultures than the regular tomato. In 2017, scientists found a fossil of a related plant in Argentina. This fossil was 52 million years old!

Tomatillos need specific things to grow well in a field.

They love warm sun and temperatures between 25 and 32 °C. If it gets below 16 °C, they do not grow very well. Farmers usually plant them in sandy, fertile soil.

A single plant can grow quite tall, reaching up to 2 meters. Because they branch out so much, farmers often use stakes to hold them up. This helps keep the fruit from touching the ground. One plant can produce between 60 and 200 fruits in one season.

Learning about tomatillos helps us understand how plants connect to our lives.
