Many people love their strong flavor. This taste comes from a curing process. This means they are cleaned and kept in salt or brine. This turns their flesh a deep grey color. Some people eat them in vinegar. These are called boquerones en vinagre in Spain. They stay white and taste milder.

Anchovies help make many foods taste great. They are used in Worcestershire sauce. People also use them in fish sauces. In Vietnam, they make the main sauce called nước mắm. In Korea and Japan, people use dried fish for soup. This makes the soup taste rich.

Fishermen also use them as bait. They catch larger fish like tuna with them. In Turkey, people eat them from November to March. They might eat them fried or grilled. In some places, they are a popular pizza topping.
