People add salt to the eggs to make them tasty. It is often eaten as a spread or a small snack. Most caviar comes from fish in the sturgeon family.

The most famous kind comes from the beluga sturgeon. These fish live in the Caspian Sea. Their eggs are large, like the size of a pea. Beluga caviar can be black or silver-grey. Other types include Ossetra, which is light brown. There is also Sevruga, which is grey.

In the past, people ate caviar in different ways. In old Russia, they sometimes ate it hot. They would mix it with pepper and onions. Some even added butter or lemon juice.

Today, many people farm sturgeon in big tanks. This is called aquaculture. Farming helps protect wild fish from being overfished. China makes the most caviar in the world. Italy is also a top producer. In the United States, much of the caviar comes from farms in California. People value caviar for its unique taste and texture.
