Soft serve is a cold and creamy frozen dessert.

It is very similar to regular ice cream. However, it is much softer and less dense. This happens because more air is added during the freezing process. This air is called overrun. The amount of air changes how the treat tastes. A little air makes it feel heavy and icy. More air makes it feel light and smooth.

Most people like an air content between 33 and 45 percent. If there is too much air, it melts very fast.

A special machine makes this treat right where you buy it. The machine keeps a liquid mix at a very low temperature. It does not freeze the mix completely in the storage part. When you want a treat, the machine draws the mix out. It then adds air through a pump or by gravity. The mix goes into a freezing chamber to churn quickly. This quick freezing stops ice crystals from growing too large. Some machines have two nozzles to dispense two flavors at once. This creates a pretty pattern called a swirl or a twist.

Many people helped make soft serve popular. Charles Taylor patented an automatic maker in 1926 in Buffalo, New York. In 1934, Tom Carvel had a flat tire in his ice cream truck. He sold his melting ice cream to people nearby. This led him to open his first store in 1936. He even made a secret recipe and special machines. In 1938, J. F. McCullough and his son Alex also made a formula. They tested it in Kankakee, Illinois, on August 4, 1938. They served over 1,600 servings in just two hours.

There are different ways to prepare the liquid mix. Some people use fresh liquid that must stay very cold. Others use a powdered mix that only needs water. There is also a special mix called ultra heat treated. This mix is sterilized and comes in sealed bags. It was first made for businesses in New Zealand in 1988. This type of mix is considered very safe by health experts. It can last a long time without a refrigerator.

In Japan, people enjoy unique flavors like tea or sesame. In Canada, many people call it soft ice cream. Even though names change, the joy of a cold treat stays the same.
