Unlike many other soft cheeses, it is not meant to age or mature. This makes it different from cheeses like Brie or Neufchâtel. Instead, it is more like Boursin or mascarpone in how it feels. It is a fresh cheese that people enjoy eating right away. Many people use it as a smooth spread for different foods.

Making this cheese is a very careful process. First, workers add lactic acid bacteria to milk that has been pasteurized. These bacteria cause the milk to change and become more acidic. As this happens, the liquid begins to thicken and turn into a solid mass called a curd. The maker must heat the mixture at just the right moment. If they wait too long, the cheese might turn back into a liquid.

In factories, stabilizers like carob bean gum help the cheese stay together. These gums help keep the fat and water from separating.

This tasty food began in the United States during the 1870s. A man named William A. Lawrence lived in Chester, New York. He was a dairyman who worked with cheese. In 1872, he made a style of cheese called Neufchâtel. Around 1873, he added cream to his process to make a richer version. He called this new creation "cream cheese."

In 1877, he even made a brand with a logo of a cow.

History shows that many different brands were made in New York. Alvah Reynolds began selling a brand called "Philadelphia Cream Cheese" in 1880. Even though it has that name, it did not actually come from Philadelphia. Other brands like Star, World, and Globe were also made by different dairymen.

In Canada, there are strict rules for making it. It must have at least 30% milk fat and no more than 55% moisture. The U.S. Food and Drug Administration has similar rules for fat and moisture levels.

People around the world enjoy eating cream cheese in many ways. It is a very common food in the Ashkenazi Jewish cuisine of New York City. One famous way to eat it is on a bagel. This is an open-faced sandwich that can include lox, capers, or vegetables.

In places like Spain and Mexico, people sometimes call it "queso filadelfia." It is a versatile food that is easy to use in many recipes.
