Unlike some other cheeses, it is meant to be eaten fresh. It does not age or mature.

A man named William Lawrence made it in New York. He was a dairyman. In 1873, he added cream to his cheese. This made the cheese richer. He called it cream cheese. Later, a man named Alvah Reynolds sold it as "Philadelphia Cream Cheese."

Many people think it comes from Philadelphia. That is not true. It started in Chester, New York.

Making it takes careful steps. Workers add bacteria to milk. These bacteria make the milk change. The liquid turns into a solid mass. This is called a curd. The liquid part, called whey, is removed. To make it smooth, factories may add gums. These are called stabilizers. They help the cheese stay together. People love to eat it on bagels. You can add fish or vegetables on top. It is a very popular food in New York City.
