It is made by mixing cheese with other things. These things are called emulsifying agents. These agents help the cheese stay smooth. When you melt regular cheese, it can get lumpy. The fat and protein might separate. But processed cheese stays creamy when it is hot.

This makes it great for burgers or grilled cheese.

People first made this in Switzerland in 1911. Two men named Walter Gerber and Fritz Stettler did it. They wanted cheese that would last a long time. Later, a man named James L. Kraft found new ways to store it. He used heat to keep it safe.

Today, you can find it in many forms. Some come in big blocks. Some come in small, wrapped slices.

You might see it called cheese food or cheese spread. In the United States, many people call it American cheese. It is often yellow or off-white. Some types, like Provel, are used on pizza.
