Sour cream is a thick and creamy dairy product.

It is made by fermenting regular cream with certain types of lactic acid bacteria. This process is called souring. The bacteria change the cream to make it thicker and more acidic. This acidity is a natural way to help preserve the food. Some people enjoy a type called crème fraîche. This version has a higher fat content and a less sour taste. People love using it to add a rich texture to their meals.

Making sour cream in a factory involves many careful steps. First, makers standardize the fat content. In the United States, the cream must have at least 18% milk fat. They may also add dry ingredients like whey or stabilizers. Stabilizers like guar gum or pectin help the cream stay smooth. They also prevent liquid from separating when the container is moved. Next, they add organic acids to help the good bacteria grow.

After the cream is prepared, it undergoes homogenization. This step breaks large fat globules into very small pieces. This makes the cream look white and feel very smooth. Then, the cream goes through a process called pasteurization. This is a mild heat treatment. The cream is heated to 85°C for thirty minutes. This kills harmful bacteria so the good ones can grow safely. After heating, the cream is cooled down to 20°C. This is the perfect temperature for the starter culture.

Once the cream is the right temperature, it is inoculated. This means makers add a starter culture of 1–2% active bacteria. These bacteria ferment the lactose in the cream into lactic acid. The mixture is then put into packages to ferment for 18 hours. During this time, the acidity level drops from 6.5 to about 4.6. This change in acidity causes the proteins to form a strong gel. This is what gives sour cream its famous thick texture. Finally, the cream is cooled one last time and packaged for the market.

Sour cream is a very popular topping for many different foods.

In Tex–Mex cooking, it is often served on nachos, tacos, or burritos. It can also be stirred into soups to make them creamy. Some people even use it in baking to add moisture. In other places, it is used on dishes like Lithuanian cepelinai.

Because it is a dairy product, you must always keep it in the refrigerator. Once you open a container, it usually lasts for 7–10 days.
