Yogurt

language culture Maturity 5-7 Next article →

Yogurt is a creamy food that many people love to eat. It has a special tart flavor and a thick texture.

This happens because of a process called fermentation. During this process, tiny living things called bacteria eat the sugars in milk. These bacteria turn the sugars into lactic acid. This acid is what makes the milk change its shape and taste. People enjoy yogurt as a snack, a dessert, or even a part of a meal.

Making yogurt is a careful way of working with milk. Most people use milk from cows to start. You can also use milk from goats, camels, or yaks.

First, a special mix of bacteria is added to the milk. This mix usually includes Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. Then, the milk must stay at a warm temperature. This warmth lasts for 4 to 12 hours. If it is too hot, the yogurt might become lumpy. Some people even use a filter to strain it.

This makes the yogurt even thicker.

Humans have been eating yogurt for a very long time. It was likely discovered by Neolithic people around 5000 BC. These people lived in Central Asia and Mesopotamia. They probably found out how to make it by chance. In ancient Greece, people ate a yogurt called oxygala. A famous person named Galen said they ate it with honey.

Long ago, yogurt might have been made by accident in goat skin bags. The word yogurt comes from very old Turkic words. It is related to words that mean to thicken or to knead.

Scientists have studied yogurt to learn how it works. A student named Stamen Grigorov looked at Bulgarian yogurt in 1905. He found the specific bacteria that make it. Later, a scientist named Ilya Mechnikov thought yogurt helped people live long lives. He helped make yogurt popular all over Europe. In 1919, Isaac Carasso started a business in Spain called Danone. He named it after his son, Daniel. In the United States, companies like Colombo Yogurt added fruit to the bottom. This made the yogurt much sweeter for many people.

Today, yogurt is a part of many different cultures. In Nepal, it is called dahi and used in weddings. In India, dahi is a very important food. In Iran, people make a cold soup with yogurt, herbs, and cucumbers. There is even a special yogurt from Bhaktapur called juju dhau. Yogurt is also a good source of many things our bodies need. It has protein, calcium, and vitamins like B12. Many people eat it because they believe it is good for their health.
