Yogurt

language culture Maturity 5-7 Next article →

Yogurt is a thick and creamy food.

It starts as milk. Tiny living things called bacteria change the milk. This process is called fermentation. These bacteria turn milk sugars into lactic acid. This acid gives yogurt its tart flavor and thick feel.

Most people use cow's milk to make it. You can also use milk from goats, camels, or yaks.

Each kind of milk makes a different result. To make yogurt, people mix in a culture of bacteria. They keep the milk at a warm temperature for 4 to 12 hours.

Yogurt is found all over the world. In Nepal, people call it dahi. They eat it at weddings and festivals. In India, dahi is a very old food. In Greece, people eat a yogurt called oxygala with honey.
