People value goat cheese for its unique taste. The milk has a special tart flavor. This flavor comes from medium-chain fatty acids. These are called capric and caprylic acids. They take their names from the Latin word for goat.

Making cheese is a careful way of working with milk. First, the milk is filtered to remove any impurities. Then, a starter agent is added to the milk. This agent can be rennet or special bacteria. These starters help create curds of different sizes.
