Soft serve is a cold and creamy treat.

It is like regular ice cream but much softer. This happens because air is added while it freezes. This air is called overrun. More air makes the treat feel light and smooth. It also makes the color look whiter.

If there is less air, the treat feels heavy and icy.

A special machine makes soft serve right where you buy it. The machine keeps a liquid mix very cold. It churns the mix and adds air quickly. Some machines have two nozzles. These can make a pretty swirl of two flavors.

People call this treat by many names. In Vermont, they call it a creemee. It is often made with maple syrup.

In the United Kingdom, people often call it a 99. This is when they add a chocolate Flake to the cone. Soft serve has been sold in the United States since the late 1930s. You can find it at fairs, parks, and many restaurants.
