It is not actually a pepper like black pepper or chili. Instead, it comes from the dried outer shell of a fruit. These fruits grow on plants in the Zanthoxylum family. This family is closely related to citrus fruits like lemons and oranges. People love this spice because it has a bright, citrus-like flavor. It also creates a very unique feeling in your mouth. This sensation is a tingling or numbing feeling. It can feel like a tiny vibration, similar to a 50-hertz hum.

There are many ways to use this spice in cooking. Most people use the dried husks rather than the fresh fruit. When the fruit is dried, the shiny black seeds inside are removed. You can use the shells whole or grind them into a fine powder. This powder is a key part of five-spice powder. Some cooks make a special Sichuan pepper oil to add flavor. This oil lets you taste the spice without the gritty texture of the shells. You can also make a condiment by mixing salt with toasted pepper. This salt is often served with chicken, duck, or pork.

This spice has a long history in many different places. In China, people have used Zanthoxylum plants for cooking and medicine for centuries. Many different types of these plants grow in the region. One type is called Zanthoxylum bungeanum, which is red and very pungent. Another type is Zanthoxylum schinifolium, which is green and more numbing. Farmers have worked to grow many different strains over the years. These plants are very important to the food traditions of many people. They help create the famous flavors found in many Asian dishes.

Different cultures use the spice in their own special ways. In Sichuan, it is mixed with chilies to make mala sauce. This sauce is used in Chongqing hot pot and mapo doufu.

In the Himalayas, it is used in many tasty treats. People in Nepal use it to flavor momo dumplings. In Bhutan, it is used in snacks, noodles, and even blood sausages. Other parts of the world use related plants too. For example, Indonesian Batak cuisine uses a spice called andaliman. In Korea, it is sometimes used in fish soups like chueo-tang.

Sichuan pepper has even had a complicated history in the United States. From 1968 to 2005, the government banned importing the peppercorns. This was because the plants could carry a disease called citrus canker. This disease is hard to control and could hurt citrus crops. To fix this, the rules changed in 2005. People could import the spice if they heated it for ten minutes. This heat kills any bad bacteria. By 2007, the rules were changed again, and the ban ended completely. Now, people can enjoy this wonderful spice more easily.
