It adds a sweet and warm smell to many foods. People often use it in biscuits and breakfast cereals. You might also find it in tea or hot chocolate. It can be used in savory dishes too. This spice comes from the inner bark of certain trees. The special smell and taste come from a part called cinnamaldehyde.

Making the spice is a careful process.

First, workers grow the trees for about two years. Then, they cut the stems down to the ground. New shoots grow from the roots the next year. The stems must be worked while the bark is still wet. Workers scrape off the outer bark first. Then, they beat the branches with a hammer to loosen the inside. This inner bark is pried off in long, thin rolls. These rolls are called quills. They curl up as they dry in the warm air.

Cinnamon has a very long and mysterious history.

It was brought to Egypt as early as 2000 BC. In ancient times, it was so valuable that it was a gift for kings. Some people even used it to embalm mummies in Egypt. For a long time, traders kept the source of cinnamon a secret. This helped them keep control over the spice trade. Some old stories even said giant birds collected the sticks for their nests. These stories were likely made up to make the spice seem even more special.

There are several different types of cinnamon.

One type is Cinnamomum verum, which is called Ceylon cinnamon. It comes from Sri Lanka and is known as "true cinnamon." It is light brown and has a soft, crumbly texture. Most other cinnamon is called cassia. Cassia includes Chinese cinnamon and Indonesian cinnamon. Cassia is often harder and more woody. It has a very strong and spicy flavor. This makes it great for baking things like cinnamon rolls.

In Sri Lanka, the bark is even graded by size. They use names like Alba and Mexican for different groups. Small pieces are called quillings or chips. This helps people know exactly what they are buying. It is a huge industry that connects many parts of the world.
