It serves as a flavoring for sweet treats like biscuits and breakfast cereals. It also enhances savory dishes, teas, and hot chocolate. This spice is obtained from the inner bark of trees in the genus Cinnamomum. The distinct aroma and flavor come from essential oils. The main component is cinnamaldehyde, though other substances like eugenol also contribute to its profile.

Producing cinnamon requires a specific and careful agricultural process.

Farmers first grow the evergreen trees for approximately two years. They then perform a process called coppicing, which means cutting the stems at ground level. New shoots emerge from the roots the following year. Once these stems are ready, they must be processed while the inner bark is still wet. Workers scrape away the outer bark and beat the branches with a hammer. This action loosens the inner bark so it can be pried off in long rolls. These rolls are known as quills. They curl as they dry in warm, well-ventilated areas over four to six hours.

There are several distinct types of cinnamon sold in international markets.

Cinnamomum verum is known as "true cinnamon" or Ceylon cinnamon. It originates in Sri Lanka and has a light brown color. Its texture is fine, less dense, and crumbly. In contrast, most commercial cinnamon is classified as cassia. This group includes C. cassia, also called Chinese cinnamon. It is harder, woodier, and thicker than true cinnamon. Other varieties include Indonesian cinnamon (C. burmanni) and Saigon cinnamon (C. loureiroi). Cassia provides a stronger, spicier flavor that works well in baking.

The history of cinnamon is filled with mystery and high value.

It was imported to Egypt as early as 2000 BC. In ancient times, it was considered a gift for monarchs and deities. Ancient Egyptians used cinnamon in recipes for kyphi, an aromatic substance for burning. It was even used in the embalming of mummies. For centuries, Mediterranean traders kept the spice's source a secret to protect their monopoly. Some ancient writers, like Herodotus, recorded tales of giant birds collecting cinnamon for nests. These stories were likely fictions created by traders to increase prices.

During the Middle Ages, the exact origin of cinnamon remained unknown to Europeans.

Some believed it was fished from the Nile in Ethiopia. By the 1500s, explorers like Ferdinand Magellan searched for spices for Spain. The Dutch eventually took control of cinnamon production in Sri Lanka by 1640. They improved harvesting methods and began cultivating their own trees. In 1767, the British East India Company established a large estate in India. This became the largest cinnamon estate in Asia. These colonial shifts changed how the world accessed this precious spice.

Cinnamon production is a massive global industry with significant economic impact.

In 2023, total world production reached 238,403 tonnes. China led the world, producing 39% of the total amount. Vietnam, Indonesia, and Sri Lanka also contributed heavily to this total. In Sri Lanka, the industry uses a strict grading system for quills. These grades include Alba, Continental, Mexican, and Hamburg. Each grade is defined by the diameter of the quill. Smaller pieces are categorized as quillings, featherings, or chips. This system ensures quality for international buyers.

Understanding cinnamon involves looking at its biological and chemical properties. The spice is deeply connected to the study of botany and international trade. Scientists can even distinguish between types using chemical tests. For example, a tincture of iodine test can detect Chinese cinnamon in a sample. If Chinese cinnamon is present, the mixture turns a deep blue. This shows how science helps verify the purity of food products. From ancient religious rituals to modern industrial farming, cinnamon remains a vital part of human culture.
