There are two main types of cardamom that people use. Green cardamom is also called true cardamom. It is a very expensive spice because it is special. People use just a little bit to give a strong, sweet scent.

Black cardamom is different because it is larger and dark brown. It has a smoky smell and a cool feeling like mint.

Farmers often clear small plots of land in the forest to plant them. They might burn brushwood to help the soil get ready for new plants. The cardamom plants take a few years to grow tall and strong. In the third or fourth year, they begin to produce crops. Farmers must pull weeds from the ground to keep the plants healthy. When the fruits are ripe, workers break them off the stems. They place the pods in baskets lined with fresh leaves.

It is a key part of spice mixes like Indian masalas and Thai curry pastes. You might find it in a hot cup of masala chai. It is also used to make rice smell wonderful. Because the seeds lose their flavor quickly, it is best to keep them in their pods. If you need ground cardamom, ten whole pods are about the same as one teaspoon. Whether it is in a sweet bun or a savory curry, this spice brings people together.
