Black pepper

life science Maturity 9-11 Next article →

Black pepper is a famous spice used all over the world. It comes from a flowering vine called *Piper nigrum*. This vine belongs to a plant family named Piperaceae. The plant is a perennial, which means it lives for many years. It is a woody vine that can grow up to 10 meters tall. To grow, it needs to climb on trees, poles, or trellises.

The vine produces small flowers on long spikes. These spikes grow into fruit called drupes. Each fruit is a small, dark red berry with one seed inside. When people dry these fruits, they call them peppercorns.

There are different ways to prepare these peppercorns. Black pepper is made from unripe, green fruit. First, the green berries are cooked briefly in hot water. This heat breaks the cell walls inside the fruit. It also helps enzymes work faster so the fruit turns brown as it dries. The berries are then dried in the sun or by a machine for several days. As they dry, the skin shrinks and turns into a dark, wrinkled layer.

White pepper is made differently. It uses the seeds of fully ripe fruit. People soak the ripe red berries in water for about a week. This process is called retting. It softens the skin so it can be rubbed off. This leaves only the white seed behind.

People have used black pepper for a very long time. It has been used in Indian cooking since at least 2000 BCE. In the ancient Roman Empire, pepper was a very expensive seasoning. A famous third-century cookbook called *De re coquinaria* used pepper in most of its recipes.

During the Middle Ages, pepper was a luxury for the wealthy. In the 13th century, the traveler Marco Polo saw how popular it was in China. He heard that 43 loads of pepper were used every day in the city of Kinsay. Later, in the 15th century, Admiral Zheng He brought back so much pepper that it became a common item.

Black pepper is native to South or Southeast Asia. It grows best in soil that is moist and rich in organic matter. The plants need soil that is well-drained and not too dry. Farmers grow these plants by using cuttings. They tie the vines to trees with rough bark to help them climb.

The vines usually start bearing fruit in their fourth or fifth year. They typically produce crops for about seven years. Farmers must harvest the spikes carefully. They pick them when the fruit is still hard and before it is fully mature. If the fruit gets too ripe, it can lose its spicy flavor.

Even though we call it pepper, it is not the same as a chili pepper. The spiciness in black pepper comes from a compound called piperine. This is a different kind of heat than the capsaicin found in chilies. You might see black pepper in a shaker on your dining table.

It is often paired with salt to make food taste better. Sometimes, people even use it in sauces or mashed potatoes. While it is a very common spice today, it has a long history of being a precious treasure from far away lands.
