People put cayenne on seafood or meats. It is great in stews and casseroles. You might find it in egg dishes like omelettes. It is also used in curries and hot sauces. Some famous hot sauces in North America use it. These include brands like Frank's RedHot and Crystal. It is even used in herbal supplements. This is because of a part called capsaicin. The peppers are also very nutritious. They are rich in vitamin C and vitamin A.

These peppers have a very long history.

Indigenous people have grown them for 7,000 years. They first came from French Guiana. Christopher Columbus brought them to the rest of the world around 1493. At that time, spices were very hard to find in Europe. Spices were often seen as a luxury. This was because of high taxes and myths. People called cayenne "The Poor Man's Pepper." It was easy to grow. It helped end the spice shortage by replacing expensive spices.

There are many different types of cayenne. Some names you might hear are Cow-horn or Golden Cayenne. Other types include Cayenne Carolina and Egyptian Cayenne. Most of these peppers are quite hot. They are often rated at 30,000 to 50,000 Scoville units. This is a way to measure heat. However, some varieties are much milder. Some are rated at 20,000 units or even less. While most are red, some are yellow or purple. In the 1800s, yellow peppers were very common.

This family is called Solanaceae. It is also known as the nightshade family. Cayenne is a type of Capsicum annuum. This is the same group as bell peppers and jalapeños. The name "cayenne" might come from an old language. The Old Tupi language was spoken in Brazil. They used the word kyynha for capsicum. This name is also linked to the town of Cayenne. It might be named after the pepper or a river.
