Most recipes use chili peppers as their main ingredient. Some makers keep things simple with just salt and vinegar. Others add fruits or vegetables to change the taste or texture. They might use mango, carrots, or even chayote squash. Some sauces are made through fermentation or by aging in wooden casks. This aging process is very similar to how people make wine.

Making these sauces involves many different steps and styles. Manufacturers might puree ingredients or cook them to get a specific flavor. Some use vinegar as a natural way to keep the sauce fresh. In Puerto Rico, a sauce called Pique is made by steeping peppers in vinegar.

Another type, Don Ricardo Original Pique, includes pineapple for flavor. In Mexico, many sauces focus more on taste than intense heat. They often use chipotle peppers or seeds from the achiote plant for color. Some Mexican sauces even use a marinade called adobos.

People have used hot spices for thousands of years. In the United States, one of the first bottled hot sauces appeared in 1807 in Massachusetts. Most of those early brands did not last very long. Tabasco sauce is the oldest recognizable brand in the U.S. industry, appearing in 1868. By 2010, it was the 13th best-selling condiment in the country. Other famous brands include Frank's RedHot, which was 12th on that list.

Texas Pete was introduced later, in 1929.

Different places have very special ways of making sauce. In Belize, sauces often use habanero peppers with onions and carrots. Jamaica is known for using the Scotch bonnet pepper.

In New Mexico, many sauces contain no vinegar at all. Green chile sauce is made by roasting peppers and mixing them with a thick roux. Red chile sauce uses dried ground pods of native red chiles. In Lebanon, a sauce called Shatta uses oil and vinegar to add a kick to meats.

The heat you feel comes from a part of the pepper called capsaicin. This causes a burning sensation in your mouth. We can measure this heat using the Scoville scale. This scale shows how much water is needed to dilute the sauce until the heat disappears. Some peppers are much hotter than others. The ghost pepper and the Trinidad Scorpion are very spicy.
