In the United Kingdom, mushroom ketchup was very common in the 1600s. Today, we usually make it with tomatoes, sugar, and vinegar. We also add spices like garlic, onion, and cloves. People love to eat it with hot or greasy foods. It is also used in dressings like Thousand Island sauce.

Many recipes also include spices like cumin, mustard, or cinnamon. Some versions even use ginger or celery. The spices and flavors can change depending on the recipe. In the past, people used many different ingredients to make it. Some recipes even included anchovies or insects. Over time, cooks began to add more sugar. This created the sweet and sour taste we know today. This change happened as people wanted to preserve the sauce longer.

Where the word ketchup comes from is a big mystery.

One theory is that it came from China. It might be from the Amoy region. Some believe it comes from words meaning the juice of pickled seafood. Another idea is that it came from the Malay word for soy sauce. There is also a theory about French or Arabic words. Some think it relates to a Spanish word for pickling sauce. The word first appeared in English in the year 1682. It was written as ketchup or catchup. Later, it was sometimes spelled as catsup.

History shows how ketchup changed in different lands. In the United States, Jonas Yerkes was the first to sell it in a bottle. By 1837, he was selling it all over the country. In 1812, James Mease wrote the first known tomato ketchup recipe. Later, companies like Heinz helped make tomato ketchup very popular. In the early 1900s, people worked to make it safer. They wanted to stop using a chemical called sodium benzoate. Scientists found that more sugar and vinegar could prevent spoilage instead. This helped create the thick tomato ketchup we use now. In Australia, the sauce is often more sour and runny.

Ketchup is a very strange kind of liquid.

It is called a non-Newtonian fluid. This means its thickness changes when you put stress on it. If you shake the bottle, the sauce becomes thinner. This helps it squirt out of the top more easily.

If you leave it still, it becomes thick again. Sometimes, a layer of water might form on top. This happens because the water separates from the other parts. Scientists are even studying how to make better bottles. They want to help all the sauce slip out without leaving a mess.
