Fish sauce

language culture Maturity 5-7 Next article →

Fish sauce is a salty liquid used to make food taste savory. This special taste is called umami. It comes from a part of the fish called glutamate. People use it as a main seasoning in many East and Southeast Asian kitchens. You might find it in countries like Thailand, Vietnam, Cambodia, Laos, Myanmar, and the Philippines. Chefs all over the world use it to add depth to their cooking. It can be used during cooking or as a base for dipping sauces.

Making fish sauce is a slow and careful process. Most modern versions use only fish and salt. People often use anchovies, mackerel, or shrimp. They mix the fish with salt at a level of 10% to 30%. Then, the mixture sits in a closed container for up to two years. Long fermentation makes the flavor rich, nutty, and savory. Short fermentation makes the sauce taste very fishy. Some makers even boil the fish mass to get a second-pass sauce. This second sauce is thinner and costs less.

This seasoning has a very long history. In China, records show people using fermented fish 2,300 years ago. During the Zhou dynasty, they mixed fish with soybeans and salt. By the Han dynasty, soy sauce and fish sauce became separate things. In the West, the ancient Greeks made a sauce called garos. The Romans made a similar sauce called garum or liquamen. They often made it from mackerel scraps in Spain. They would salt the fish and let it sit in the sun for months.

Different places have their own special names and styles. In Thailand, it is called nam pla. People often serve it with lime and chilies as phrik nam pla. In the Philippines, it is called patis. Patis is often skimmed from the top of fermenting fish called bagoong. In Cambodia, it is called tik trei. Some famous sauce comes from the Kampot Province. In Vietnam, it is called nước mắm. The most famous areas for this are Phú Quốc and Phan Thiết. Phan Thiết has a museum dedicated to fish sauce.

Fish sauce is quite different from other sauces like oyster sauce. While oyster sauce is thick and sweet, fish sauce is watery and clear. It is also related to Worcestershire sauce because both use fermented anchovies. In Vietnam, high-quality sauce is often called "first press." This means it comes from the very first time the barrels are drained. You can also tell quality by looking at the color. A deep golden amber color is often preferred. Many people enjoy how these different traditions bring people together through food.
