Making miso is a special two-step process. First, makers create a starter called kōji.

They do this by growing a fungus named Aspergillus oryzae on steamed rice. This fungus helps break down starches into sugars. Next, the kōji is mixed with soybeans and salt. This mixture is left to ferment and age. This can take as little as five days or several years. The temperature and humidity must be kept just right. This helps the right tiny living things grow in the paste.

History shows that miso has been around for a very long time. Some types of grain and fish sauces existed in Japan since the Jōmon period. This was between 14,000 and 300 BC. Later, fermented soy foods likely arrived with Buddhism in the sixth century AD. In the Nara period, from 710 to 794, the word for it began to look like "miso." During the Kamakura period, a common meal included rice, fish, vegetables, and miso. By the Edo period, many different types emerged for different local cultures.

Miso comes in many colors and tastes. Akamiso, or red miso, is dark and salty.

It is often aged for more than a year. Shiro miso, or white miso, is much lighter and sweeter. It has a very short fermentation time. Some people in eastern Japan like darker miso. People in western regions like Kyoto prefer lighter kinds. You can even find miso made from barley, buckwheat, or hemp seeds. Some makers even use chickpeas or quinoa today.

You can enjoy miso in many delicious ways. It is often used to make sauces or spreads.

For example, it can be used on eggplant in a dish called Nasu dengaku. You can also use it to pickle fish or meat. Because it is a living food, it is best to add it to soup at the very end. This keeps the healthy microorganisms inside the paste alive. It is a wonderful way to add a savory taste to your food.
