It is one of two main types of soup in Japanese cooking. People often eat it as part of a meal called teishoku. This meal set usually includes rice and other small side dishes. It is a very common part of a traditional Japanese breakfast. Many people in Japan eat it at least once every day.

This soup is a favorite for everyone from common people to royalty.

To make the soup, you first need a broth called dashi.

Chefs make dashi using ingredients like dried kelp or dried shiitake mushrooms. They might also use dried baby sardines or smoked fish shavings. Some people add clams like shijimi or asari to the soup. When these clams are used, the chef might not use dashi at all. The miso itself is a seasoning made from fermented soybeans. This paste is stirred into the warm broth to create the soup.

The flavor of the soup depends on the type of miso used.

There are three main kinds: red, white, and mixed. White miso is fermented for a short time. This makes it taste light and sweet. Red miso stays in the fermentation process much longer. This gives it a much stronger and deeper flavor. Different regions also have their own styles, like Shinshu or Sendai miso. More than 80% of the miso made in Japan goes into making soup.

Chefs choose ingredients to show the different seasons of the year.

They look for contrasts in color, texture, and taste. For example, they might mix soft tofu with strong-flavored negi onions. They also mix things that float, like seaweed, with things that sink, like potatoes. If a chef adds pork, the dish is called tonjiru.

Tonjiru is a hearty soup often eaten for lunch or dinner.

Miso soup is a healthy choice that many people enjoy.

Some studies suggest it can help lower blood pressure and heart rate. It may also help keep the intestines healthy. You can eat fresh soup from a lacquer bowl with a lid. You can also find instant miso soup in small packets. These packets use dried powder or paste that works with hot water. They are very popular for quick meals at work or at home.
