The food is served in very large bowls. These big bowls are also called donburi. The name refers to both the food and the bowl itself. You can top the rice with many different things. Some people use meat or fish. Others like to use vegetables. You can even use leftovers to make a delicious bowl.

Making the dish involves a tasty simmering sauce. This sauce changes based on the season or the region. A common sauce uses dashi, which is a stock made from fish and seaweed.

Chefs also add soy sauce and mirin, a sweet rice wine. Usually, there is much more dashi than the other ingredients. For a dish called gyūdon, a cook might use water, dark soy sauce, and mirin. For oyakodon, a cook might use light soy sauce, dark soy sauce, and sugar. This simmering process helps the flavors soak into the toppings.

Some types of donburi have a very long history. Unadon is one of the oldest kinds of rice dishes.

It was invented during the Bunka era between 1804 and 1818. This was during the late Edo period in Japan. Unadon features eel fillets that are grilled in a style called kabayaki. The eel is glazed with a sweet sauce called tare. The cook often grills the eel over a charcoal fire. This makes the sauce turn into a tasty glaze.

There are many different names for these rice bowls. Gyūdon is a beef bowl with onions and sometimes a soft egg.
