This dish is loved because it creates a rich, thick sauce that coats the meat.

There is a specific way to make a fricassee. It is halfway between a sauté and a stew. A sauté uses no liquid at all. A stew uses liquid from the very start. In a fricassee, you first cook cut-up meat in a pan. You do not brown the meat deeply. This means the meat does not get a dark crust. Then, you add a liquid like broth or cooking stock. You simmer the meat in this liquid to finish it. This process makes a smooth, thick sauce.

This way of cooking has a very long history. People have made similar dishes since the year 1300. The word fricassee comes from France. It first appeared in English books in the mid-16th century. In 1490, a printed book used the name specifically. An old book from 1586 even had a recipe for a lamb's head. By the 1700s, an American recipe by Mrs. John Burroughs used nutmeg and wine.

Different places use different ingredients for their fricassee. In England, cooks often thickened the sauce with egg yolks. In Italy, they used a mix of lemon and egg yolks. In the Spanish Caribbean, the sauce uses tomato juice and red wine. Jamaican chicken fricassee is a popular meal for Sunday dinner. Abraham Lincoln even liked chicken fricassee very much. In Jewish cooking, the dish is often called "chopped chicken."

Many cultures have changed the recipe to fit their own traditions. Jewish cooks often use chicken scraps like wings or feet. They use olive oil or schmaltz, which is chicken fat. They do this because they do not mix meat with dairy. In the Caribbean, settlers from France and Spain brought the dish to the islands. Some versions use olives and garlic. You might serve this delicious meal with rice, noodles, or dumplings.
