It is loved for its rich and creamy texture. People in Italy often eat it as a first course. Sometimes it is served as a single meal. The dish is special because it is very smooth. This texture comes from the rice itself. You do not need to add heavy cream to get this feeling.

Making risotto requires constant care and attention. You must not rinse or boil the rice first. Washing the rice would remove the starch needed for creaminess. First, you cook the rice in a soffritto of onion and butter. This coats each grain in a thin film of fat. Then, you add white wine for the rice to absorb. Next, you add warm broth in small amounts. You must stir the pot constantly while the liquid cooks away. This stirring makes the grains rub against each other. This action releases starch to create a smooth mass.

History tells us that rice has grown in southern Italy for centuries. It later moved to the Po Valley in the north. The marshes there were perfect for growing rice. A legend says a glassblower's apprentice helped create a version of it. He worked at the Veneranda Fabbrica del Duomo di Milano. He used saffron as a color pigment for his work. He reportedly added this yellow spice to a rice dish at a wedding. The first written recipe for risotto dates back to 1809.

Specific types of rice are best for this cooking method. You need short or medium grains that are round. These grains release more starch than long grains. Popular varieties include Arborio, Baldo, and Carnaroli. Carnaroli is hard to overcook. Another type, Vialone Nano, is smaller and cooks faster. It also absorbs flavors very well. Some varieties like Maratelli were developed in the 20th century. The Maratelli variety first appeared in 1914.

There are many regional ways to enjoy this dish. In Piedmont, some people use red wine and sausage. In Veneto, you might find risotto made with black cuttlefish ink. Some people love a version made with pumpkin and nutmeg.

Others use mushrooms like porcini or even black truffles. It can also be made with fresh seafood near the sea. In Italy, the texture should be "all'onda." This means the rice flows like waves on a flat plate. It should be creamy but not watery.
