Gruyère is a famous hard Swiss cheese that many people love.

It is named after the town of Gruyères in the Fribourg region. This cheese is known as an Alpine or Swiss-type cheese. It has a taste that is sweet but also slightly salty. The flavor changes a lot depending on how old it is. Young cheese often tastes creamy and nutty to people. As it gets older, the taste becomes earthy and more complex.

Some aged cheese even has small cracks that feel a bit grainy.

Making this cheese is a very careful process that uses raw cow's milk. First, makers heat the milk in a large copper vat. They add liquid rennet to turn the milk into thick curds. These curds are cut into tiny pieces the size of peas. After stirring to release the liquid whey, the curds are cooked. The makers then strain the whey and press the curds into moulds. Finally, the cheese is salted and smeared with bacteria to help it ripen.

History and rules are very important for Gruyère production. In 2001, it gained a special status called AOC. This later became the AOP in 2013. These rules mean that makers must follow strict steps for making and ripening. This helps keep the cheese special and protects its name. In the 19th century, the cheese often had small holes called eyes. Today, modern machines make the cheese with very few holes. Scientists found that these holes once came from tiny bits of hay dust in the milk.

There are many different kinds of Gruyère to discover. One special kind is called Le Gruyère Premier Cru. It is made only in the canton of Fribourg and ages for 14 months. This variety has won the best cheese in the world five different times!

Other types are named by how long they age. You might hear names like doux, mi-salé, or salé. There is even a special summer version called Alpage. These different ages change how the cheese tastes and feels.

People use Gruyère in many delicious ways in their kitchens. It is a wonderful cheese for melting in a warm fondue. You can also find it in French onion soup or a toasted sandwich called a croque-monsieur. Some people like to grate it over salads and pasta. It also works well in dishes like quiche or chicken cordon bleu. Because it has a distinct taste, it is great for baking. You can even enjoy it as a table cheese with white wine or sparkling cider.
