language culture Maturity 7-9 Next article →

Cheddar cheese is a famous type of natural cheese enjoyed by people everywhere.

It can look off-white or a bright yellow-orange color. To get that orange color, makers often add annatto from tropical seeds. Some people even add paprika to change the look. The taste can be mild or very sharp and pungent. Strong, older cheese might even have tiny, crunchy crystals inside.

First, makers separate the curds from the liquid called whey. They use something called rennet to help this happen. Then comes a step called "cheddaring." This is where the curd is kneaded with salt. The cheese is cut into cubes to drain the liquid. Finally, the cheese is stacked and turned to get ready. Some types must mature for 15 months or even longer.

In the 1800s, a man named Joseph Harding changed everything. He is known as "the father of cheddar." He used new tools like a revolving breaker to cut curds. His family helped spread cheddar to Scotland, North America, and Australia.
