It is very common in South Asian cooking. People make it using cow milk or buffalo milk. It is an acid-set cheese. This means an acid helps the milk change. You can use lemon juice or citric acid. You can also use vinegar or yogurt. This process separates the milk into curds and whey.

Paneer does not age like some other cheeses. It also does not melt when you cook it. This makes it a very useful ingredient. It stays in firm shapes even in hot food.

Making paneer follows a few clear steps. First, you add the acid to hot milk. This causes the milk to separate into solid curds. Next, you drain the curds through a thin cloth. You must press out the extra water. In North India, people wrap the curds in cloth. They place a heavy weight on them. A stone slab might stay on top for hours.

This makes the cheese firm enough to cut into cubes. If you press it for only 20 minutes, it stays fluffy. In East India, people knead the cheese by hand. They make it into a dough-like mix. This version is often called ponir.

No one knows exactly where paneer began. Many different people have different ideas. Some believe it comes from ancient India. The Vedas are very old texts from India. Some say they mention cheese-like things. Others say they only mention sour milk.

Another theory says it came from Persia. The word paneer actually comes from the Persian word for cheese. It might have spread during the time of the Mughal Empire. Some people think Afghan travelers brought it to India. Others suggest the Portuguese brought acid-setting ideas to Bengal in the 17th century.

History shows many ways to make cheese. A 10th-century text called the Lokopakara describes recipes. It mentions using buffalo milk and plant roots. One soft cheese was called Haluvuga. Another recipe used Indian mallow to make sweet balls. A 12th-century king named Someshvara III wrote about a sweet food called Kshiraprakara.

This was made from milk solids. In the Kushan-Satavahana era, between 75 and 300 CE, people used acid to change milk. Some experts think this was the earliest paneer. These old stories show how people have used milk for a long time.

Paneer is famous for many delicious dishes. You can find it in spicy meals or sweet ones. Shahi paneer is a popular Mughlai curry dish. Matar paneer is made with peas. You might try palak paneer with spinach. Some people love paneer tikka on skewers. This is a vegetarian version of chicken tikka.
