Mozzarella

language culture Maturity 5-7 Next article →

Mozzarella is a soft, fresh cheese from southern Italy. People love it for its smooth texture and unique taste. It is often used to top pizzas or mixed into pasta dishes. You might also find it in a Caprese salad with tomatoes and basil. One of the most fun things about fresh mozzarella is the sound it makes. If you chew it or rub it, it makes a distinct squeaky noise.

Making this cheese follows a special way called the stretched-curd method. First, the maker cuts the curd into pieces. Then, they stir and heat the pieces to separate them from the liquid called whey. After the liquid is drained, the solid mass is placed in a hoop. The maker waits until the cheese reaches a specific acidity level. Once it is ready, the maker kneads the cheese by hand. This creates a smooth and shiny paste that can be pulled into shapes.

The history of mozzarella goes back many centuries. A cookbook by Bartolomeo Scappi from 1570 mentions it alongside butter and ricotta. Even earlier, a man named Monsignor Alicandri wrote about it in the 12th century. He said the Monastery of San Lorenzo in Capua gave it to pilgrims on bread. Some research suggests that the buffalo used for milk arrived in Italy from India in the 7th century. This shows how long people have enjoyed these flavors.

There are many different sizes and types of mozzarella. Small balls called bocconcini are about the size of a hen's egg. Even smaller ones are called ciliegine, which means "small cherries." Bite-sized pieces are called mozzarelline, or "small mouthfuls." Some people call these "buffalo eggs" when they use buffalo milk. You can also find low-moisture mozzarella, which has less water. This type is great for baking in lasagna because it stays firm.

Rules help protect the names of special cheeses in Europe. For example, mozzarella has a certification called Traditional Speciality Guaranteed. This means it must be made using a traditional recipe. Some very special types have a Protected Designation of Origin, or PDO. This status is for buffalo milk cheese from specific areas like Campania and Lazio. In Italy, buffalo milk cheese is often called mozzarella di bufala. These rules help people know they are eating the real thing.
