A person who makes pizza is called a pizzaiolo. To cook it, the dough is often slid into a very hot oven using a long paddle called a peel. These ovens might use wood or coal to create high heat. Some restaurants use special brick ovens, while others use electric ovens or even conveyor belts.

Long ago, Persian soldiers baked flatbreads with cheese and dates on their shields. In the year 997 AD, the word "pizza" was first written down in a document from the town of Gaeta, Italy. This old record mentioned that people had to give twelve pizzas as a payment. Modern pizza grew from similar flatbreads in Naples, Italy, during the 18th or 19th century. One famous story says a baker named Raffaele Esposito made a special pizza for Queen Margherita in 1889. He used red tomatoes, white mozzarella cheese, and green basil to match the colors of the Italian flag.

There are many different kinds of pizza to discover.
