It is usually made from a dough of wheat flour and water or eggs. This dough is shaped into many forms and then cooked by boiling or baking. While most pasta uses durum wheat, some versions use rice flour or beans. These special kinds are made for people who cannot eat gluten. Pasta is a very important part of Italian food and culture.

Fresh pasta is often made by hand or with small machines. It usually uses eggs, which makes it very tender and soft. Because it is fresh, it only takes about half the time to cook. Dried pasta is mostly made in large factories using big machines. These machines use a process called extrusion to push dough through shapes. This method allows factories to make huge amounts of pasta to sell everywhere.

In the 1300s, writers described delicious pasta dishes in Italy. Some people believe Marco Polo brought noodles from China, but that is likely a myth. Instead, historians think pasta spread through trading in the Mediterranean Sea. By the 1400s and 1500s, dried pasta became very popular. It was easy to store on ships during long voyages to the New World.

There is an amazing variety of pasta shapes to discover.

In the 1600s, Naples began using machines to make pasta more easily. By 1740, the first pasta factory was licensed in Venice. Later, in 1859, Joseph Topits started the first pasta factory in Hungary. Today, pasta is found in supermarkets in almost every country. Many factories even add vitamins like iron and B vitamins back into the flour. This makes the pasta more nutritious for everyone to eat.
