Making noodles can happen in many different ways. First, a cook makes a dough using flour, salt, and water. For wheat noodles, they might add eggs or lye for color and taste. Some cooks use a method called pulling to make long strands. This is known as lamian. Other cooks use a knife to peel dough into strips. This special style is called daoxiaomian. Some even flick soft dough into boiling water using a bamboo stick.

Noodles have a very long history in China. The earliest written record comes from the Eastern Han period. This was between 25 and 220 AD. During the Han dynasty, noodles became a very important food. The government even helped make food processing better for the military. They made Laomian, which used buckwheat and millet. This helped the food stay good during long trips. Later, during the Song dynasty, noodle shops stayed open all night.
