Cooking in Jamaica uses many clever steps and tools.

For example, the Taíno people used wooden grills to smoke and roast meat. This is how the famous jerk method began. They also used stone tools to grind corn and cassava into flour. Some people use a flat earthenware griddle called a burén to bake bread. Other cooks use a clay pot called a yabba to season meats. These methods help create deep and rich flavors in every meal.

The history of this food started with the Taíno people.

They lived on the island long ago and grew many native crops. They made bammy, which is a traditional bread made from cassava. They also made drinks from maize and a tree-bark drink called mauby. As far back as 1494, they were even brewing cocoa beans. Later, the Spanish and Portuguese arrived with new fruits and animals. They brought things like citrus, coconuts, and cattle to the island.

Many different cultures added their own ingredients over the years.

African people brought crops like okra and gungo peas. They also shared ways to make one-pot meals like rice and peas. People from India brought turmeric and curry powder to the island. This led to tasty dishes like curry goat and curry shrimp. The British brought baked goods like sponge cakes and fruit cakes. Even the Irish and Scots influenced foods like Irish moss and porridges.

You can see these influences in almost every bite.

Ackee and saltfish is the national dish of Jamaica. It uses saltfish, which was a cheap protein for many people. You might also try a Jamaican patty, which is a spiced meat turnover. Some people enjoy sweet treats like coconut drops or gizzada. These flavors have even spread to other parts of the world. When people move, they take their delicious recipes with them.
