It brings together flavors from many different lands. People brought their own cooking traditions to the islands. These traditions came from West Africa and Europe. They also came from Asia and the Middle East. This mix makes the food very special to the people. It shows how many cultures live together in one place.

Many islands use the same base ingredients for their meals.

You will often see rice, beans, and plantains. Cooks also use cassava and sweet potatoes. Coconut is a very common part of many dishes. Most meals include bell peppers, tomatoes, or chickpeas. Many people also eat beef, poultry, pork, goat, or fish. These foods are often found right on the islands.

One key way to add flavor is using sofrito.

Sofrito is a green marinade made of oil and herbs. It uses garlic, onions, and spicy Scotch bonnet peppers. It can also include celery and green onions. Other herbs like rosemary, thyme, and marjoram are used too. This seasoning makes curries, stews, and roasted meats taste great. It is a very important part of the cooking style.

History explains how these flavors arrived in the Caribbean. In 1493, Christopher Columbus made voyages to the area. During these trips, the Spaniards introduced many new ingredients. They brought coconut, chickpeas, cilantro, eggplants, onions, and garlic. Later, different groups like the British, Dutch, and French arrived. They brought their own food styles to the islands. Enslaved and indentured laborers also brought their own traditions. These people worked on the plantations and shared their recipes.

Each island has its own famous and unique meals.
