It represents a blend of flavors from many different continents. These traditions arrived through the movement of people across the world. The food reflects the history of the islands and their many inhabitants. It combines elements from West Africa, Europe, and Asia. It also includes influences from the Americas, the Middle East, and the Pacific. This mixture creates a unique culinary identity for the entire region.

Many common ingredients serve as the foundation for Caribbean meals.

Cooks frequently use rice, beans, and plantains in their cooking. They also rely on cassava and sweet potatoes for starch. Coconut is a very common ingredient throughout the islands. Other staples include bell peppers, tomatoes, and chickpeas. For protein, people use beef, poultry, pork, goat, or fish. These ingredients are often locally available to the people living there.

A vital part of the cooking process involves a specific seasoning. This seasoning is a green marinade called sofrito.

Sofrito is made from a base of oil and various herbs. It typically includes garlic, onions, and spicy Scotch bonnet peppers. Chefs may also add celery and green onions to the mix. Other herbs used in the marinade are rosemary, thyme, and marjoram. It can also contain cilantro, Mexican mint, chives, and tarragon. This marinade is used to flavor curries, stews, and roasted meats.

The history of these flavors began with early global voyages. In 1493, Christopher Columbus arrived in the region during his Spanish voyages. The Spaniards introduced several new ingredients to the islands. These included coconut, chickpeas, cilantro, eggplants, onions, and garlic. Later, colonization by the British, Dutch, and French brought more European styles.

At the same time, enslaved and indentured laborers arrived to work on plantations. These workers brought West African, Indian, South Asian, Chinese, and Javanese traditions. Their culinary knowledge helped shape the modern Caribbean kitchen.

Different islands have developed their own specific and famous dishes. In Jamaica, a popular and unique dish is ackee and saltfish. Another widely distributed dish is callaloo, which uses leafy vegetables. Callaloo often contains spinach and sometimes okra. This dish has a character that is both African and indigenous. In the Anglophone Caribbean, people enjoy a dish called cook-up or pelau. These various recipes show how different cultures have merged over time.

Some dishes hold great importance for national identity and culture. For example, goat stew is very significant in certain islands. In Montserrat, a local version of goat stew is the official national dish. St. Kitts and Nevis also considers it one of their signature dishes. Even desserts reflect this long history of cultural mixing. In some areas, people serve black cake on special occasions. This dessert is a derivative of the English Christmas pudding.

Caribbean cuisine connects the islands to a massive global network. It links West African traditions with European and Asian methods. The food serves as a map of human movement and history. It shows how different groups like the Portuguese and Arabs influenced the region. It also connects the islands to East Asian and Middle Eastern flavors. This culinary system is a living record of how the world has changed. It remains a source of pride and togetherness for the people of the Caribbean.
