Mexican cuisine is a complex and ancient culinary system. It represents the traditions and foodways of modern Mexico. This cuisine is built on thousands of years of history. It combines native Mesoamerican ingredients with influences from other cultures. Because of its deep social meaning, UNESCO recognized it in 2010. It is on the Representative List of the Intangible Cultural Heritage of Humanity.

The foundation of this cuisine lies in ancient agricultural practices. Early groups like the Olmec and Maya domesticated maize. They also created the process of nixtamalization. This process involves treating corn to make it more nutritious. Most maize is dried and then nixtamalized. It is ground into a dough called masa. This dough is used for many foods. People use it for tamales, sopes, and atole. The most common use is for tortillas.

Chile peppers are the other essential staple. They are indigenous to Mexico. Many people think these peppers are only for heat. However, they are used for a wide range of flavors. The type of chile used often defines a dish. For example, many dishes are defined by their sauces. These include adobo, pipians, and moles. Some sauces use the ancho chile. A common smoked-dried pepper is the chipotle.

Mexican cuisine includes many distinct types of ingredients. Native staples include beans, squash, avocados, and cacao. Cacao is the source of chocolate, which the Aztecs prized. Other unique items include edible flowers and cactus pads, known as nopal. Some regions also use insects, a practice called entemophagy. Popular species include chapulines, which are grasshoppers. Others include escamoles, or ant larvae.

The history of the cuisine changed with the Spanish Conquest. Spaniards introduced many Old World staples. These included beef, pork, chicken, goat, and sheep. They also brought dairy products like milk and cheese. Other imports included rice, sugar, and olive oil. Spanish influence is very clear in Mexican sweets. Items like churros and alfeñiques have Hispanic or Muslim heritage. This created a unique fusion of traditions.

Regionality plays a massive role in how food is prepared. Different areas have their own specific styles. Examples include Oaxacan, Veracruz, and Chiapas cuisines. There are also styles like Baja Med and Lebanese Mexican. In the United States, people recognize Tex-Mex and New Mexican cuisines. These variations depend on local conditions and available ingredients.

Food is deeply tied to the social structure of Mexico. Preparing food for family is seen as a social investment. This helps maintain important relationships. Daily life follows a specific meal pattern. Most households eat four meals a day. The heaviest is "comida," eaten between noon and 2 p.m. It often features meat in sauce with beans and tortillas.

Many foods are tied to specific festivals and symbolism. For instance, pan de muerto is baked for the Day of the Dead. Another example is chile en nogada. This dish is eaten during the celebrations of the Grito de Dolores. It uses red, white, and green ingredients. These colors represent the country. Such traditions ensure that the history of Mexico remains alive through its food.
