It is defined by the "Mediterranean triad," which consists of wheat, olive oil, and wine. This foundation shapes the flavor profile of almost every dish. Olive oil is the most characteristic and ancient element used in the kitchen. It is produced from olive trees that grow throughout the region.

This oil provides a distinctive taste that is central to the diet. The cuisine also relies heavily on vegetables, grains, fish, and various meats. These ingredients create a diverse range of meals that vary by region and era.

Cooking methods in Greece often focus on simplicity and seasonal ingredients. One common technique is making lathera, which are seasonal vegetables stewed in olive oil and tomato sauce.

Other dishes utilize filo, a very thin pastry used to wrap fillings. This results in many types of savory pies known as pitas. Examples include spanakopita, a spinach and cheese pie, or kotopita, a chicken pie.

For quick meals, street foods like souvlaki and gyros are very popular. These often involve meat served in pita bread or on skewers. Many recipes also use the plaki method, where food is roasted in a tin with olive oil, tomatoes, and herbs.

In northern Greece, chefs often use "sweet" spices like cinnamon, allspice, and cloves in meat stews. Dairy plays a massive role through a wide variety of cheeses. These include Feta, Kasseri, Graviera, and Manouri, among many others. Even breakfast can be quite complex, featuring items like bougatsa, which is a pastry, or strapatsada, which is scrambled eggs with tomato.

History shows that Greek food has evolved through many different eras. Ancient Greek cuisine was characterized by frugality and a reliance on fish rather than meat. The Spartan army was famous for a specific dish called melas zomos, or black soup. This was made by boiling pig's legs, blood, olive oil, bay leaf, onion, salt, and vinegar.

During the Byzantine period, new ingredients like nutmeg, basil, and caviar were introduced. The position of Constantinople as a spice trade hub helped expand these flavors. Later, the 20th century saw influence from French cooking, specifically through chef Nikolaos Tselementes. He is credited with creating the modern version of moussaka by adding a French-style gratin topping to an eggplant dish.

Cultural exchange has added layers of complexity to the Greek table. Many dishes are borrowed and adapted from Italian, Turkish, and Middle Eastern traditions. For example, pastitsio is an adaptation of the Italian pasticcio. The Ottoman influence brought items like meze, halva, and loukoumi to the region.

Some ingredients, like lemons, were originally used medicinally in the second century before becoming dietary staples. Even the way fish is prepared, such as the sun-dried and beeswax-sealed avgotaracho, shows long-standing specialized traditions. These influences have merged to create a cuisine that is both ancient and constantly changing.

Regionality provides distinct culinary identities across the country. The Ionian islands show significant Italian influence, while the Aegean islands have their own unique styles.

The Greeks of Asia Minor descent maintain the Mikrasiatikí tradition, which has Anatolian and Ottoman roots. In coastal regions, seafood is the primary focus, featuring items like grilled octopus or fried calamari.

Some areas even have specialized shops, such as bougatsadika for pastries or galaktopoleia for dairy products. This diversity ensures that food is not just a single style, but a collection of local customs.

Today, the importance of this way of eating is recognized globally. In 2013, the Mediterranean diet was added to the UNESCO Intangible Cultural Heritage Lists.

This honors the cultural value and health aspects of the diet. Dining out is a central part of social life, with tavernas and estiatorios serving affordable home cooking. Whether it is a simple snack like a sesame bread ring or a complex feast, the food remains a vital connection to history. It connects the modern Greek people to their ancestors through the shared experience of eating.
