Turkish cuisine is a vast collection of traditional and regional foods.

It encompasses the culinary practices of Turkey and its diaspora. This cuisine developed primarily from Ottoman cuisine. The Ottoman style synthesized Central Asian traditions with Mediterranean and Middle Eastern influences. Because of this history, Turkish food helped shape the cuisines of many former Ottoman territories. These include the Balkans, the Levant, Mesopotamia, North Africa, the South Caucasus, and Crimea. This history created a deep, shared culinary heritage across these regions.

Cooking styles vary significantly across the different parts of Turkey. In Istanbul, Bursa, and İzmir, many dishes inherit elements from Ottoman court cuisine. These dishes often use moderate amounts of spices. They also show a preference for rice over bulgur. Common foods in these areas include koftes, vegetable stews called türlü, eggplant, and stuffed dolmas.

In the Black Sea Region, the cuisine uses fish extensively. A common fish there is the hamsi, or Black Sea anchovy. This region also includes many maize dishes. The southeast, including cities like Urfa and Gaziantep, is famous for many types of kebabs. It is also known for mezes and dough-based desserts.

Examples of these sweets include baklava, şöbiyet, kadayıf, katmer, and künefe.

Regional geography also dictates how food is prepared. In western Turkey, olive trees grow in large numbers. Because of this, olive oil is the primary fat used for cooking. The Aegean, Marmara, and Mediterranean regions rely heavily on vegetables, herbs, and fish. Central Anatolia is home to specialties like keşkek and gözleme. It is also famous for mantı, which are small dough triangles filled with meat.

Interestingly, the name mantı is related to the Chinese mantou, or steamed bun. It is generally believed that mantı originated in Mongolia during the 13th century. In Turkey, food names often refer to specific places or preparation styles. For instance, an Urfa kebap is thicker and less spicy than an Adana kebap.

The study of Turkish culinary history has grown over time. In the early years of the republic, only a few regional studies existed. However, the 1980s saw more interest due to the growing tourism industry. The Turkish state sponsored two food symposia to discuss these traditions. Researchers presented Turkish cuisine as a "historical continuum." This timeline starts with Turkic origins in Central Asia and continues through the Seljuk and Ottoman periods.

Earlier, Süheyl Ünver popularized the study with his 1948 book, "Fifty Dishes in Turkish History." He used recipes from an 18th-century Ottoman manuscript. In 1978, historian Bahaettin Ögel published a study on Central Asian origins.

Breakfast is a highly structured and varied meal in Turkey. The Turkish word for breakfast is kahvaltı, which means "before coffee."

In fact, the English word "yogurt" comes from the Turkish word yoğurt. It can be eaten with meat, vegetables, or mantı. A thicker version called süzme yoğurt is made by straining the curds from the whey. Another common item is ayran, a drink made from yoğurt. Turkey also produces many cheeses, mostly from sheep's milk. There are 193 different types of cheese in the country.
