Georgian cuisine

Georgian cuisine represents a complex collection of cooking traditions, techniques, and practices unique to the country of Georgia. While it shares some similarities with the national cuisines of the Caucasus, the Middle East, and Eastern Europe, it maintains a very distinct character. The food is deeply tied to the country's history as a major stop on the Silk Road. This ancient trade route allowed travelers to influence local flavors and ingredients. Today, eating and drinking remain central to Georgian culture.

A major part of this culinary culture is the supra, a traditional feast. These gatherings are often spontaneous and held for relatives, friends, or guests. Every supra is led by a toastmaster, a person who gives toasts and entertains the guests. This social structure turns a simple meal into a significant cultural event. The feast serves to celebrate the Georgian love of family and community.

Regionality defines much of the country's food diversity. In the Abkhazian region, many dishes rely heavily on walnuts and spices. Popular items include abysta, a corn porridge, and ajika, which is a hot, spicy sauce or paste. In the Adjara region, geography dictates the menu. The mountainous areas produce heavy, fat-rich dairy dishes. In contrast, the seaside areas use many fresh herbs and spices. One famous dish from this region is Adjaruli khachapuri, a cheese bread shaped like an open boat.

Walnuts are a common thread through many other regions like Guria and Imereti. Guria is known for dishes like satsivi, which is meat served in a bazhe walnut sauce. Imereti also uses walnuts generously in dishes such as pkhali, which are minced vegetables. Imereti is also famous for its specific cheeses, including sulguni and chkinti. These cheeses are essential building blocks for many Georgian recipes.

The Kakheti region is famously called the "Region of Wine." It is a major center for viticulture, producing many indigenous grape varieties like Saperavi, Kisi, Rkatsiteli, and Mtsvane. Kakheti is also the birthplace of tonis puri, a type of Georgian bread. The cuisine here is more meat-based, featuring dishes like mtsvadi, which is meat cooked over a fire. Other notable dishes include khinkali, which are meat-filled dumplings, and chakapuli, a soup made with meat and fresh herbs like tarragon.

In the western region of Samegrelo, the cuisine is considered some of the most famous in Georgia. It frequently uses spices and walnuts, much like Abkhazia. A staple here is ghomi, a cornmeal porridge, which can be served as elarji when mixed with sulguni cheese. Samegrelo is also a traditional home for ajika. Other famous dishes include Tabaka, where chicken is cooked with ajika, and kharcho, a beef stew.

Desserts and specialized ingredients add further depth to the cuisine. Kakheti produces churchkhela, a candy made from grape juice and walnuts.

In Samtskhe-Javakheti, people make tklapi, which are fruit roll-ups, and chiri, which are dried fruits. In the Svaneti mountains, people use Svanetian salt, a special spiced salt. They also use Agasyllis, a medicinal plant that is eaten raw, cooked, or pickled. These diverse ingredients show how much Georgian food is connected to the local land and its history.
