Allspice is a very special spice used in many foods. It comes from the dried berries of the Pimenta dioica tree.

People call it many names like Jamaica pepper or pimento. It is not a mixture of different spices. Instead, it has a flavor that reminds people of cinnamon, nutmeg, and clove. This is why the English gave it the name allspice in 1621. It is a very important part of cooking in many lands.

Making allspice requires careful work to keep its flavor. Farmers pick the berries while they are still green and unripe.

These green fruits are then dried in the sun. Once they are dry, they turn brown and look like large peppercorns. People must be careful during the drying process. They want to keep the special oils inside the fruit. These oils, like eugenol, give the spice its strong smell and taste.

The allspice tree can grow in different ways. It can be a small shrub or a tall canopy tree. Some farmers grow these tall trees to provide shade for coffee trees. The trees love warm places like Mexico and Central America. They also grow in the Greater Antilles and parts of the West Indies. Jamaica is the leading source of this plant today.

Allspice has a very interesting history with birds. For a long time, the plant was only found on the island of Jamaica. This happened because birds helped spread the seeds. People tried to grow the seeds in other places, but they failed. They later learned that the seeds must pass through a bird's digestive tract. The heat and acid inside a bird help the seeds start to grow. This discovery finally allowed people to grow allspice in new places.

Many different cultures use allspice in their traditional meals. In Jamaica, it is used for jerk seasoning and pimento dram liqueur. In Mexico, people call it pimienta gorda. In the Middle East, it is used for many meat dishes and stews. People in Poland call it English herb because Britain exported so much of it. In Sweden and Norway, it is used in meatballs and hot pots. It even gives Cincinnati-style chili its special aroma in the United States.
