Nutmeg is a wonderful spice that comes from the fragrant nutmeg tree.

This dark-leaved evergreen tree is special because it provides two different spices from its fruit. The seed inside becomes nutmeg, which has a warm and slightly sweet taste. The reddish covering around the seed is called mace, which has a more delicate flavor.

People love using these spices to flavor many tasty things. You might find nutmeg in pumpkin pie, rice pudding, or even eggnog. Mace is often used in light dishes because it adds a bright orange color.

Making these spices is a slow and careful process. First, the seeds must be dried in the sun for 15 to 30 weeks. During this time, the seed shrinks away from its hard outer shell. You can tell they are ready when the kernels rattle inside when shaken.

Next, a person breaks the shell using a wooden club to pick out the seeds. To make mace, the crimson aril is removed from the seed and flattened out. This covering is then dried for 10 to 14 days. As it dries, the color changes to pale yellow, orange, or tan.

The history of nutmeg is very long and full of adventure. Scientists found evidence of nutmeg use on the island of Pulau Ai 3,500 years ago.

For a long time, the Banda Islands in Indonesia were the only place to find it. By the 13th century, Arab traders knew exactly where it came from. However, they kept the location a secret from European traders for many years. In 1512, a Portuguese expedition finally reached the islands to buy nutmeg and cloves. Later, the Dutch East India Company fought a very hard battle to control the trade.

There are many interesting facts about how nutmeg grows and is used. Nutmeg trees are dioecious, which means an individual plant is either male or female. Because it is hard to tell the sex of a seedling, farmers often use grafting to grow them. It takes 7 to 9 years for a tree to have its first harvest. A tree only reaches full production after it is 20 years old. In 2023, the world produced 219,223 tonnes of nutmeg. Guatemala, India, and Indonesia are the biggest producers today.

Nutmeg connects many different cultures around the whole world. In Indonesia, people make sweet treats called manisan pala from the fruit. In the Caribbean, a sprinkle of nutmeg is often put on top of tropical drinks. Even the flag of Grenada shows a picture of a split-open nutmeg fruit. In the United States, Connecticut is called "the Nutmeg State." This name came from stories about traders who made fake nutmegs out of wood. Whether in a spicy soup or a sweet dessert, this spice is a global treasure.
