language culture Maturity 5-7 Next article →

Mixian are special rice noodles from the Yunnan Province in China. These noodles are known for being round, thick, and having a silky texture. They are very good for you because they have vitamins, minerals, and enzymes. The starch in the noodles gives your brain energy to work well. They also help your stomach feel better if you have indigestion. People love them because they are easy to cook and stay firm when boiled.

There are two main ways to make these noodles today. The first way uses fermented rice to make "sour pulp rice noodles." These are smooth, chewy, and have a sweet rice smell. The second way is much faster and uses a machine. A machine pushes rice flour through holes to make "dry rice noodles." These are easy to carry and store for a long time. They stay very firm and chewy when you eat them.

Making noodles is a very old tradition in China. An ancient book called "Qi Min Yao Shu" describes how to make them. Long ago, people ground glutinous rice into a fine powder. They mixed it with water and honey to make strands. During the Song Dynasty, people made "rice cords" to give as gifts. A poet once said these noodles were as thin as silk.

There is a famous story about a dish called "Crossing the Bridge Rice Noodles." It comes from Mengzi County in southern Yunnan. A scholar named Yang used to study for a long time. His wife wanted his food to stay hot while he worked. She used a clay pot with chicken fat to keep the soup warm. She added meat and vegetables so they would cook in the hot broth.

When you eat Mixian, you can choose many different styles. Some people eat them stir-fried with eggs, tomatoes, and chili. Others eat them in a "small pot" made of clay or copper. You can even add a "hat," which is a tasty meat topping. Many restaurants have an "ingredient bar" with herbs and pickles. This lets you build your own perfect bowl of noodles.
