Mozzarella

language culture Maturity 5-7 Next article →

Mozzarella is a soft cheese from southern Italy. It is made using a special way called the stretched-curd method. Makers heat and stir the curd. They then drain the whey, which is the liquid part of milk. The cheese makers knead the curd by hand. This makes it smooth and shiny.

There are many kinds of mozzarella. Some use milk from cows. Others use milk from Italian buffalo. Buffalo milk cheese is often called mozzarella di bufala. This cheese can be white or light yellow. Fresh mozzarella even makes a squeaky sound when you chew it!

Mozzarella comes in many shapes and sizes. Small balls are called bocconcini. These are about the size of a hen's egg. Even smaller pieces are called ciliegine, which means "small cherries." Some pieces are bite-sized and called mozzarelline. People love to eat this cheese on pizza or pasta. It is also great in a Caprese salad with tomatoes and basil. Some types have less water. This low-moisture cheese is good for baking in dishes like lasagna.
