It is very common in South Asian cooking. People make it using cow milk or buffalo milk. To make it, you add an acid to hot milk. You can use lemon juice or citric acid. This helps the milk separate into parts. The soft parts are called curds.

People drain the curds through a thin cloth. They press out the extra water. In North India, people often use a heavy stone. They press the cheese for two or three hours. This makes it ready to cut into cubes. In East India, people knead the cheese by hand. They make it into a dough. This cheese is called ponir there. People eat it with bread or biscuits. Paneer is used in many tasty dishes. Some are sweet, like shahi paneer. Others are spicy, like chilli paneer. You might find it in palak paneer with spinach. It is a very versatile food.
