People love it because it has a very strong and wonderful smell. This fragrance comes from a natural chemical called 2-acetyl-1-pyrroline. This special scent is about 12 times stronger in basmati than in other rice. Some varieties, like Dehradun Basmati from India, even have a smell like popcorn.

Because it smells so good, it is often used in many delicious meat and vegetarian curries.

There are specific ways to prepare this rice to get the best results. If you soak the grains for 30 minutes before you start cooking, you can help it. Soaking makes the cooking time 20% shorter than usual. It also helps keep more of that lovely aroma in the rice.

This rice also has a medium glycemic index. This means it sits between 56 and 69 on a special scale. This is different from jasmine rice, which has a much higher index of 89.

This rice has a very long history in the Indian subcontinent. People believe it has been grown there for thousands of years. The earliest written mention of basmati was in the epic poem Heer Ranjha. A Punjabi poet named Waris Shah wrote this poem in 1766.

The name itself comes from two ancient Sanskrit words. The word "vas" means fragrance, and "mayup" means present or ingrained. When combined, they create the name we use today.

Most basmati rice comes from specific areas in India and Pakistan. India produces over 70% of the world's supply of this rice.

Between April 2018 and March 2019, India exported 4.4 million metric tons. In the same time, India's exports were worth over US$3.4 billion. Pakistan also grows much of it, especially in the Punjab province. In the 2020 fiscal year, Pakistan exported 890,207 tonnes of basmati.

Many different places around the world now grow their own versions. In Indonesia, farmers created a local hybrid called baroma. In the United States, a variety called Texmati is grown in Texas.

Even in Kenya, there is a rice called Pishori. This name is actually a change of the word Peshawari. Because basmati is so valuable, scientists even use DNA tests to check it. These tests make sure that traders have not mixed in cheaper, non-basmati rice.
