Making asafoetida involves collecting the sap from the plant. This sap is called latex or oleoresin. It comes from the taproot or the rhizome of the herb.

When the plant is cut, the liquid flows out. This liquid then dries into a solid piece. The pieces can look like irregular shapes. They are often yellowish or brownish pink in color. Sometimes, a fresh piece might look red or peach-colored for a short time.

This helps meet the high demand for the spice. There are also different grades like Hing and Hingra.

If you use asafoetida in food, you might notice it tastes like garlic or onion.
