It comes from a purple flower called the saffron crocus. This plant produces tiny, bright red threads known as stigmas.

People use these threads to add color and flavor to food. Saffron can turn dishes a beautiful golden-yellow color. It also has a unique smell like sweet hay. Because it is so precious, many people call it "red gold."

Growing and collecting saffron is a very big job.

The plants grow from small, brown, bulb-like parts called corms. These plants are sterile, which means they cannot make seeds on their own. Humans must help them grow by digging up the corms and replanting them. This is called vegetative division. To get a good harvest, growers must plant the corms in deep, sunny soil. They often plant them in June in the Northern Hemisphere. The flowers bloom in the middle of autumn.

Harvesting the spice requires a lot of careful work.

The flowers bloom very quickly in a short window of time. Workers must pick the flowers by hand at dawn. This is because the flowers wilt as the day gets warmer. It takes a huge amount of effort to make a small amount of spice. For example, workers must pick 150,000 flowers to get just one pound of dried saffron. One single flower only gives about 7 milligrams of dried threads.

It has been grown and traded for more than 3,500 years. One early record of saffron is found in an Assyrian text from the 7th century BC. The spice spread across Eurasia through trade and conquest. It likely started in places like Iran, Mesopotamia, or Greece. The English name "saffron" comes from the Old French word "safran." This word traces back to a Persian word, "zarparan." This Persian name means "gold-strung" because of the spice's golden color.

Today, saffron is a vital part of many cultures.
