It is a tall, bushy herb that looks a lot like a thistle. This plant belongs to a family called Asteraceae. Today, most people grow it to make vegetable oil. They get this oil by extracting it from the tiny seeds. Each flower head can hold between 15 and 50 seeds. Sometimes, a single head can even have more than 100 seeds.

Watching a safflower grow is like watching a slow, steady climb. It starts as a small rosette of leaves on the ground. This stage happens in the winter when it is cold. The plant can even handle frost during this time. When the days get longer and warmer, a central stem begins to grow upward. This stem grows branches, and those branches can grow even more branches.

These branches eventually hold colorful flower heads. The flowers are often yellow, orange, or red. They can even be white or cream colored.

Humans have a very long history with this plant.

Archaeologists found traces of safflower growing in Mesopotamia from as early as 2500 BC. Ancient Egyptians also used it to make dyes for their cloth. Even the famous pharaoh Tutankhamun had safflower garlands in his tomb. In ancient Greece, people used different parts of the plant for different things. They used the red parts for one use and the pale seeds for another. It has been a useful tool for many different cultures throughout time.

Safflower is a very tough plant that likes dry places.

It has a deep taproot that grows far down into the earth. This root helps the plant reach water deep in the soil. Because of this, it can survive through droughts better than some other crops. It likes to grow in warm weather, especially when temperatures are around 30 degrees Celsius. Farmers grow it in many places. They grow it in the summer in California and in the winter in India. It can grow in many types of soil, as long as the soil is deep.

Because its petals look like a spice called saffron, people call it "false saffron."

This name comes from how much the flowers resemble the real thing. In the past, people used it to color their food. In New Mexico, people still grow a special kind called "Corrales Azafran." They use this variety in their cooking just like saffron. It is amazing how one plant can be used for oil, for dyes, and for flavoring food.
