People have grown it for thousands of years. Some traces date back to 2500 BC. It is a tall plant that looks like a thistle. It grows many branches and has colorful flowers. These flowers can be red, orange, or yellow.

Each flower head has many small seeds. We use these seeds to make vegetable oil. The oil makes up 20 to 40 percent of the seed.

Safflower grows well in dry places. It has a deep taproot. A taproot is one long, thick root that grows straight down. This root helps the plant find water deep in the soil. This makes the plant good at living through droughts.

Safflower is also called false saffron. This is because its petals look like saffron. In the past, people used it to dye food. It can also be used as a substitute for saffron in cooking.
